I have been to many AI resorts ( 7 ) in the area and based on your guidelines for selection I would suggest the Akumal Beach resort (ABR). SOOOO.we got our trip cost down from 3600 to 2719 and we are booking today :) I saw they were putting us on a continental flight so I went to continental vacations and found a cost of about 2850 out of went to and found that they give a 5% discount on trips booked for continental vacations, funjet, apple etc. I checked funjet and their rates were about 3100 for the 2 of us out of Buffalo. I've been looking at Tripcentral.ca and the rates are 3600 now for the 2 of us out of Toronto. We can fly out of Toronto, Buffalo, Cleveland or Pittsburg.
